Lapsang Suchong

Grown on the slopes of Wuji Mountain, in Fujian Province, China, at an elevation of 3,500 to 5,000 feet, this tea typically has a taste characterized as smoky or woody.

To achieve this, the souchong leaves (large leaves) are placed on a fire of spruce wood. The whole leaves give a red, fragrant, sweet and never bitter liquor.

It is excellent with savory dishes and fish, and is also excellent to marinate fish.
